綠茶中多酚類化合物及其抗氧化功能的研究

摘要綠茶是未經發酵制成的茶,因此較多的保留了鮮葉的天然物質,含有的茶多酚,兒茶素,葉綠素,咖啡堿,氨基酸,維生素等營養成分也較多。本文主要研究綠茶中多酚化合物的提取方法以及多酚化合物的抗氧化性。我們利用溶劑萃取法對綠茶多酚進行萃取,采用正交實驗的方法,探索溶劑種類、萃取溫度、萃取時間、萃取次數、萃取液濃度等因素對提取率的影響,找到最高提取率的提取條件。同時對提取的茶多酚物質進行檢測和抗氧化功能研究。36088
本實驗對市面上的成品綠茶以及與花嫁接的鮮茶進行有機物提取,通過單因素試驗和正交試驗得知,茶葉的最佳浸提條件為:浸提最佳溫度為70℃、浸提最佳時間為30 min、浸提最佳次數為2次、最佳溶劑質量百分數為70%,最佳浸提溶劑為乙醇。通過對茶葉多酚化合物的檢測,我們發現,嫁接鮮茶的多酚物質含量在25%至30%之間,相差的并不大。與玉蘭花嫁接的鮮茶葉多酚物質含量最多為30.96%其次是蘭花為27.04%,桂花最少為26.32%。而市面上出售的茶葉茶多酚物質含量相差較大:碧螺春多酚含量最多為34.03%,西湖龍井次之為28.75%,安吉白茶含量最少為17.15%。
通過多酚抗氧化實驗得知:無論是ABTS+自由基清除能力還是DPPH• 清除率或者是Fe3+還原能力,嫁接鮮葉的抗氧化能力都比成品綠茶的抗氧化能力較差。ABTS+自由基清除能力,碧螺春抗氧化能力最強;DPPH• 清除率,與玉蘭嫁接的鮮茶葉的抗氧化能力最強;Fe3+還原能力,碧螺春抗氧化能力最強。

 The Study on Green Tea polyphenol and its antioxidant function
Abstract This paper mainly studies the extraction method of polyphenol compounds in green tea. And Magnolia grafted fresh tea polyphenol content of up to 30.96% followed by 27.04% orchid, osmanthus at least 26.32%. The sale of tea is larger: Spring Snail polyphenol content of up to 34.03%, followed by West Lake Longjing, 28.75%, Anji white tea is the least, 17.15%.
   Through the experiment of polyphenol antioxidant that: both ABTS + radical scavenging ability or DPPH clearance or Fe3 + reduction ability and the antioxidant capacity of fresh leaves of grafted than refined green tea antioxidant ability is poor. ABTS + radical scavenging ability, Biluochun the strongest antioxidant activity; DPPH scavenging rate, and Magnolia grafting of fresh tea leaves had the strongest antioxidant capacity; ferric reducing ability, Biluochun tea antioxidant capacity is the strongest..
